The Antigua Bodega wines and champagne are elaborated under strict control using the Hazard Analysis and Critical Control Points (HACCP).

This norm establishes the requisites that the wine making industry has to abide by in order to demonstrate its ability to elaborate innocuous food products and to evaluate or verify that ability.
It enables to identify biological, chemical and physical agents that affect adversely the harmlessness or the acceptance of a product and to control it.

The Antigua Bodega Complex aims at the total quality control of product technology and production, and maintains the norm throughout all the production chain, all the way to the consumer.
